I love this meal, is fast, fresh low fat, low KJ, high protein, gluten-free etc etc i could go on. Give it a go if you are after something different, tasty and healthy.

I love this meal, is fast, fresh low fat, low KJ, high protein, gluten-free etc etc i could go on. Give it a go if you are after something different, tasty and healthy.

Instructions

  1. Place noodles into a large saucepan of boiling water and simmer for 4 minutes, until softened. Drain noodles, refresh in cold water and drain again. Set aside.

    Meanwhile, grill your chicken Breast on George Forman machine, or similar until cooked through. Remove from heat and leave to cool, then shred chicken.

    Meanwhile, make Sweet chilli dressing: Place all the ingredients into a food processor or blender and purée until smooth. Set aside.

    Cut up tomatoes. Wash bean sprouts, snow pea sprouts, coriander and mint, roughly chop mint. Cut carrot, corn and cucumber into match sticks.

    Place noodles, chicken, cucumbers, carrots, corn,, tomatoes, both sprouts and herbs into a large bowl. Add the spicy dressing and toss to combine. Divide between bowls and serve immediately.
