Louise bars This is a moist, coconut, jammy treat.
You can use any type of jam you like.
Heat oven 160 degrees.
Cream butter & sugar together.
Mix in egg yolks & vanilla.
Add the flour & baking powder to make a crumbly mixture.
Press into a tray.
Bake for 20 mins until golden brown.
Allow to cool for 10 mins.
Make the topping...
Whisk the egg whites til soft peaks.
Add sugar & cream of tartar.
whisk to stiff peaks.
Fold in coconut & vanilla.
Spread the jam over the base.
Pour topping over & bake for 35 mins.
You can make the topping smooth or jaggy.
Cut into squares.
Allow to cool completely.
Serve.
