cake mix converted to coffee cake

I was up at 4 a.m. and thought baking would be a wonderful idea!
So, I converted a yellow cake mix into a really tasty coffee cake. Yummy! (This has NUTS in the topping)
Let me know if anyone tries it, :-)

Step 1
Holding about 1/2 cup of the dry cake mix on the side for later, I made the cake as per the instructions on the box.

Then added to the batter:
2 tbl spoons cinnamon
1 tsp spoon ginger
1/4 c. ground flax seed. (to balance the sugar in the mix, :-)
2 1/2 cups of old fashion oats. -
Step 3
The batter was a little dense..but not bad, it’s a coffee cake now. I put mine in a square glass baking dish … but a bunt cake would work…..grease the pan. (you know)

Step 4
Make the topping like this:
1/2 cup of the cake mix that I set aside
1 stick of butter - (hey- I added that healthy flax!)
1 cup old fashion oat meal
1 cup sliced almonds
1/2 cup brown sugar substitute - (to balance the sugar)
Mix it until all crumbly and spread it evenly onto the top of the batter mix. -
Step 5
Bake it @ 350 degrees for about 50 minutes…or until it’s done by checking it with a toothpick. And then, when it’s all done….and you’re fanning it to help it cool faster…..eat it, :-)
