Soft, buttery cookies sandwiched together with jam.
This recipe has been in my family for a long time--it's guaranteed fail-proof! Perfect for the holidays, but then again, who really needs a reason to bake cookies? :P

Step 1
Preheat oven to 350 degrees. In a small bowl, using a hand mixer, cream together butter and sugar. Add eggs and vanilla, and mix well.

In another small bowl, mix together flour and cornstarch. Add these dry ingredients gradually and continue to mix until the mixture gets pretty thick. At this point, you'll want to use your hands to mix the rest of the flour/cornstarch in. Knead gently until everything is incorporated and you form a soft dough.

Use your preferred cookie cutter shapes to cut out top and bottom layers. Bake for 9-10 minutes, or until their bottoms are slightly golden. You will notice the bottom edges of the cookies starting to brown and that's your cue to take them out.

Step 4
Spread a thin layer of your preferred jam on the bottom part of the cookie, key word THIN, because if you put too much it will leak out the sides when you press on the top part of the cookie. You need a thin layer of jam so that the cookies stick together, and then once they're stuck, you can pour some jam through the hole to make them pretty.
