yummy homemade cannoli
Yummy Cannoli's we made at home because we cant find anywhere that sells them! Its not quite traditional becuase we had to make due. But they turned out sooooo yummy. I wouldnt change a thing!

  • Step 1

    THAW- Take the pastry sheets out of the box and follow the directions they have for thawing.

    Mine took about 40 min. So just set them aside until then.

    Also my sheets came 2 large ones in a box, But this recipie ONLY CALLS FOR ONE SHEET, lol so you can wrap up your extra on and frezze it for later. Or double the filling to make all of them.

  • Step 2

    MIX- Ricotta, granulated sugar and vanilla in a large bowl until mixed together.

    Then whip it with a mixer for two minutes.

    Taste it! If you want you can add a tiny bit more vanilla or sugar to your liking.

    When your done whipping it, cover it an move it to your fridge to chill.

  • Step 3

    FORM- With the Aluminum (tin) Foil roll up a ton of it so you have a long rod. That is about an inch thick.

    This will be your cannoli form you will wrap the pastry sheet around.

    You need 4 rods. Spray them with non-stick cooking spray!!!

  • Step 4

    CUT- With your pastry sheet layed out flat and done thawing, cut it into 4 equal parts.

    My sheet was shapped in a rectangle so they came out like rectangles. If your sheet is square, you'll just need to stretch the pieces after you cut them to make them rectangles.

    After you have your rectangles good to go, wrap them around your Aluminum Foil Rods. Make sure they only over lap about an inch or less.

    Secure one side to another. If they got a little dry while thawing, and arent sticking well, wet your finger in some water and rub the places where they will over lap. Think of it like applying a glue stick.

  • Step 5

    BAKE- With the pastries wrapped around the forms place them seam side down onto a baking sheet that it either well sprayed with non-stick baking spray, or lined with baking paper.

    Bake at 400*F for about 15 minuets. Or until they puff up and turn golden brown.

    When finished set them aside to cool, while still on the forms. You might want to twist the forms inside the shells, just to make sure they aren't going to stick when you try and take them off.

  • Step 6

    ASSEMBLE- Lastly take your filling from the fridge and add in your chocolate chips.

    Spoon it into a piping bag with no tip and fill up your cool cannoli shells!

    Add a dallop to the top and sprinkle with powdered sugar for good measure!

  • Step 7

I never thought of using pie crust for the cannoli shell! Brilliant idea! I know the perfect pie crust recipe too,
