This stuff is so freaking good, I basically inhaled my first ear of it. I was almost sad that I had to share this with other people. I did not want to. It’s best hot off the iron, but if you want to let it cool a bit so you can cut the corn off the cob then add your mayo mixture to that it will be just as good. It was so good in fact that it almost brought Stobaugh to tears and he tried to bribe me with money to make more. He even offered to drive me to the store and buy me a Starbucks along the way too. I’m probably going to one day regret letting people know that I know how to make this but it’s so good I’m glad I have it in my arsenal.

Roast your corn by whatever means necessary. I don’t have a grill or a gas range so there were no open flames for me to use so I made due with a cast iron skillet. While you’re grilling your corn mix up your mayo, sour cream, cheese and garlic in a large bowl.
Once your corn gets to the appropriate roastyness, take it off the heat and immediately roll in your topping mixture. Now here comes the Muertos bit, add some ancho chili powder on top if you like. You can also add more feta, but it’s not necessary. As you can see I like mine with no pepper, Stobaugh likes a little pepper and Alex likes lots and lots of heat.
