    Step 1

    Lay out some fajita bread flat on a plate. Place all your ingredients to one side of the bread.

    Fold the other side of the bread over.

    Place the bread in the oven or a microwave.. cook until the cheese has all melted.

    Pour a little oil in to a frying pan and cook the quesadilla until it turns gloden.

    Flip it over and cook the other side. Put it on a plate and cut it in to 4 triangles.

I love Mexican food!! have a couple packs of tortilla and fajita in the house...

I had these all the time in Mexico as it was about the only veggie food I could get. I'm not complaining though!

They're so tasty and easy to make - even my sulky teenage brother loves them.

They're also great with guacamole, salsa or refried beans. Or maybe you could go fusion and eat them with hummus or something.

PS. Cat, I love this site, it's really made me Happy

Down here in Mexico, where I live, quesadillas (keh-sah-dee-yas) are made with flour tortillas and cheese (natural, not those with artifitial flavours and colorants). The cheese is melted inside the flour tortilla by cooking it on a pan. I prefer to have it lightly cooked, not too golden, not too crunchy. But, eat it as you like! Mexican food is one of the best in the world, and can be made almost anywhere! Enjoy your meal!
