Bubble Tea
Tasty bubble tea ! This tutorial is just for the regular milk tea version, you can make lots of different flavours including fruit teas as well. Hope you enjoy :)

    Cook your tapioca pearls according to the packet instructions (or until they go chewy, ours were 15 minutes on the heat then left to sit in the water for 10-15 minutes). You need enough to fill the bottom layer or so of your cup (they do refrigerate for a few days so you can make extra to store). We couldn't find these in the supermarket, only in a small Asian themed store or online. (In the stop it was £1.75 for 250g)

    While the pearls are cooking make some tea (we used black but any will do if you like the flavour). Make it strong and you will need to enough to fill half of your cup.

    Make some sugar syrup by combining equal parts sugar and water (we used a mixture of brown and white sugar here). This is to coat the pearls and also for extra sweetness if you want :)

    Mix the pearls into the syrup and leave them to soak. We left for 5 minutes but could probably have done with a little longer.

    Spoon as many pearls as you want into your cup. We added a bit more later as the pearls are nice :)

    Add the tea to about half way

    Finally add the milk to the top. This tastes nice with different milks, we've tried almond and hazelnut as well as just normal milk and both were good. You might find you have to add some more syrup at the end (we added probably a couple of teaspoons more) as the tea can make it taste quite bitter. This can be served cold (by chilling the pearls and tea beforehand) and is also good hot. Best drunk through a jumbo straw so you can suck up the pearls too :)
