You Will Need

Step 1
A Large tortilla
Local farmstead cheese in the style of cheddar and mozzarella (We use Jisa Cheese from Brainard, NE)
or for a vegan version use a blend of Daiya mozzarella and cheddar
Shred cheese if it's not already shredded and scatter as liberally or as conservatively as you desire on your tortilla
Mince some of your favorite onion; yellow, red or green, and sprinkle on top of the cheese
Chop fresh tomatoes, local and in season if you're lucky, and toss them around strategically on the tortilla canvas
Roast some sunflower seeds or buy them already roasted and save some time but miss out on the fragrant fun of roasting them yourself and sprinkle like magic fairy dust all over the other ingredients
Half a fresh avocado, chop into bite size pieces and evenly distributed on tortilla -
Step 2
Place the loaded tortilla under broiler just until cheese is melted, just a minute or two ought to do it. You don't want to crisp your tortilla. The tortilla needs to remain pliable so you can roll it up like a burrito
Once removed from heat, add mixed greens- use a seasonal local blend if you have it available to you- a mix of arugula, spinach and baby kale makes a fine mélange! -
Step 3
Drizzle heavily with Maggie's Herb Mustard Dressing!
This is the sacred sauce!whisk it all together in a small bowl until smooth and dreamy. Warning-this sauce is highly addictive.
