Creme Brûlée
These are pretty easy to make & can be made in advance.

You can eat them hot or cold.

  • Step 1

    Heat oven 300/150 degrees.

    Heat 3 cups of water to a boil.

    Whisk the egg yolks & icing sugar & a pinch of salt together.

    Add a dash of cream to lighten the mixture.

    Add the remaining cream & mix well.

    Add the vanilla & stir to combine.

    Strain the custard mixture into a jug & pour into 6 ramekins.

    Fill the ramekins to the top.

    Place into a tray & fill with the boiling water.

    Do not get the water into the custard.

    Bake for 45 mins - 1 hr.

    The custard should be just set in the centre, not runny.

  • Step 8

    Remove from the oven & the water bath.

    Allow to cool then place in the fridge to get cold.

    Remove the ramekins from the fridge & dry the top of the custard with a napkin to remove any moisture.

    Sprinkle a little sugar on top, you should be able to see the custard through the sugar.

    Arrange the ranekins on a tray & place in the highest point of the grill.

    Grill for 5-10 mins until the sugar turns golden brown.

    Serve hot or cold.
