Step 1Coat the chicken in the seasoned flour.
Fry in a little oil until brown.

Step 2Remove chicken from the pot & brown the veg.

Step 3Return the chicken to the pot.
Add the red wine & reduce slightly.

Step 4Mix the stock, tomato purée & bay leaves together
-
Step 5Add the stock to the pot.
Bring to a boil then reduce heat to simmer.
Continue to simmer until the chicken is cooked through.
Remove the bay leaf.
Just before the cooking time is up, add the mushrooms.

Step 6Serve with mashed potatoes.
