Too lazy to cook something fancy, 15 minute dinner for one :)
This is a dish I made when I was really tired and hungry a while back. Basically I wanted to have rice and I wanted it shaken up a bit from just having it plain. Basically I added the tomatoes first and then tried it and was like "pepper goes with tomatoes" and then came the pepper and then I thought it needed dressing for some reason, which raspberry vinaigrette was on hand so that was what I used, and now it is my "too lazy to cook, so here is my 15 minute dinner" recipe.This feeds one person, so if you want to make it for more then multiply the recipe to fit your needs. Hope you like it! :)

    Make your rice!

    For one person, I use 1/2 cup rice and 1 cup water in a pot to boil. When it is boiled, put in on low to simmer for 10 minutes. Keep the lid on the pot the whole time.

    Cut up half a tomato into bite-size chunks, put into the bowl you are gonna eat from.

    When your rice is done simmering, take it out of the pot (or rice maker, if you used one instead) with a rice spatula (or a spoon) and place the rice into your bowl.

    Add some pepper (a few turns is good) and if you have any, a red wine vinaigrette or a raspberry vinaigrette (my fave) is delicious on it as well.
