Step 1Heat oven 190/375 degrees.
Line tins with pastry.

Step 2Add eggs, vanilla, sugar, coconut & butter.

Step 3Place a spoon of jam in the bottom of the tart.

Step 43/4 fill the case with the coconut mixture.
Bake for 20-25 mins until golden.
Allow to cool.

Step 5Serve.
