Chicken cakes
I used rotisserie chicken for this recipe.
The mixture needs to be refrigerated for at least half an hour.

Step 1Mix together eggs, Mayo,flour, parsley, salt, pepper, lemon juice & mozzarella.

Step 2Add the chicken.
Stir to combine.
Place in fridge for at least 30 mins.

Step 3Scoop out some chicken mixture.
Coat in breadcrumbs.

Step 4Fry in oil until golden & cooked through.

Step 5Serve.
