If you love the Zuppa Toscana at your local chain Italian restaurant, you will adore this soup. You can use lower fat Italian sausage for a healthier soup
Start with 1 pound of Italian sausage either mild or spicy according to your taste buds. Cut casing and remove sausage. Brown, drain the fat, and start adding all the goodies.
First add onion and brown. Then add potatoes, broth, and water. Lower heat and cook about 30 minutes until potatoes are soft.
Reduce heat to lowest setting. Add kale and cooked bacon. Slowly stir in heavy cream.
Serve hot with crusty bread and a green salad.
Optional sprinkle with Parmigiano Reggiano. Optional serve in bread bowl.
