If your trying to sneak vegetables into you kids meals maybe try this, both my kids demolish this slice within minutes of serving, even my partner whom hates zucchini eats this without a complaint. It does need the salt and pepper though and pls DO NOT SKIP STEP 4. You can easily add which ever vegetables you'd like to with this recipe it's very versatile but if you do add carrot pls repeat step 4 also

It does need the salt and pepper though and pls DO NOT SKIP STEP 4. You can easily add which ever vegetables you'd like to with this recipe it's very versatile but if you do add carrot pls repeat step 4 also

Instructions

  1. Preheat oven to 170°C. Grease and line a pan, you can use a deep slice pan, but I tend to use a loaf pan just because I like how it slices.

    Heat a frying pan and brown the bacon, garlic and sliced onion, this will give the slice more flavour in the end. Leave to cool

    Combine in a large bowl, eggs, dill, corn, tomato, mushroom, yoghurt, garlic and cheese Lightly mix

    Grate zucchini and squeeze out all the excess moisture by hand. If you skip this , the slice won't set and it will be runny.

    Stir the onion, bacon and squeezed zucchini into the egg mixture , season with salt and pepper and mixture together well

    Pour mixture into the prepared pan and cook for approx 30-45 minutes depending on what style pan you cook it in. When I use a loaf pan I generally get two lots out of this mixture

    Remove from oven, turn out onto a wire rack and leave to cool for a few minutes, cut into slices and serve Serve with a garden salad in thick slices to make it a main meal or thinner for a side dish.
