I love Ramen noodles as much as the next person, but we've also got to get our veggies in somehow! Zucchini noodle or zoodles are a great alternative to any noodle recipe. You could eat this raw, or lightly saute in coconut oil (which is what I did). If eating raw, simply skip the saute part! Still, a healthy meal regardless of what you choose.

I love Ramen noodles as much as the next person, but we've also got to get our veggies in somehow! Zucchini noodle or zoodles are a great alternative to any noodle recipe. You could eat this raw, or lightly saute in coconut oil (which is what I did). If eating raw, simply skip the saute part! Still, a healthy meal regardless of what you choose.

Instructions

    Mix together all the ingredients for the dressing in a small bowl and set it aside. Put a skillet on the stove at medium-high heat, wait 1-2 minutes for the pan to get hot, add a bit of coconut oil, then sautee the bell peppers for about 6 minutes. Remove the peppers to a plate, and add the zucchini noodles to the pan. Gently sautee them for about 2 minutes.

    Move the zucchini noodles to a large bowl, add the bell peppers, and the sauce, and toss until well coated.

    Top with scallions and bean sprouts.

    Note: you can also add in more things for substance, like cucumber, mushrooms, cabbage, tofu, egg, etc. Depending on what you eat and what your preferences are!
