So summer started and my mom really wanted a sweet yet healthy baked good to eat in the morning. It's safe to say that this recipe blew all of her expectations away! There's no butter and barely any added sugar. I fiddled around with some recipes on the internet until this one came about. Eat it with butter or cream cheese and it's a moist, sweet, filling snack! Instructions

  1. First things first, gather your ingredients and set up a place to work. Turn on some tunes or flip on the TV and get comfortable! Preheat oven to 350 F.

  2. Small chopped

    Start with the zucchini, apple, and carrots. IF YOU'RE USING A FOOD PROCESSOR: 1. Chop the ends off the zucchini, then dice into smaller pieces. 2. Core and chop the apple into chunks. 3. Peel, then chop the ends off the carrots. Dice into smaller pieces. IF YOU'RE USING A HAND GRATER: 1. Chop the ends off the zucchini. 2. Core and quarter the apple. 3. Peel, then chop the ends off the carrots. (The main difference between the instructions is that using a hand grater is easier with larger pieces.)

  3. Small mixed

    IF YOU'RE USING A FOOD PROCESSOR: Blend the zucchini, apple, and carrot pieces. Pulse and mix until they resemble grated pieces. IF YOU'RE USING A HAND GRATER: Grate the zucchini, apple, and carrot pieces into a bowl. (May take some time sorry!)

  4. Place the bits in a towel and wring out the excess water. You should have about 2-3 cups of fruits and vegetables.

  5. Small bananas

    In a small bowl, mash the bananas using a fork.

  6. Small mixes

    Combine the eggs, vanilla, and honey with the mashed bananas. Mix well.

  7. Small flour

    In a separate large bowl combine the flour, sugar, baking soda, cinnamon, and allspice. Whisk and mix together well.

  8. Small coat

    Mix the grated fruits and vegetables into the dry ingredients. It's easy to fold over using a silicon spatula. Make sure all of the grated bits get coated.

  9. Small dough

    Add the wet ingredients to the flour mixture and mix well. If the mixture is too dry add 1 tbsp. of oil.

  10. Fold walnuts into mixture.

  11. Small bake

    Grease or line 2 bread pans. Scoop mixture into pans and bake for 1 hour or until a toothpick inserted comes out clean. OR Grease or line muffin tins. Scoop mixture into tins and bake for 30 minutes or until a toothpick inserted comes out clean.

  12. Bake and enjoy! :D
