My coworker brought me a huge zucchini from her garden and I decided to make zucchini bread for my book club. Here's the recipe! Ingredients * 3 1/4 cups all-purpose flour * 1 1/2 teaspoons salt * 1 teaspoon ground nutmeg * 2 teaspoons baking soda * 1 teaspoon ground cinnamon * 3 cups sugar * 1 cup vegetable oil * 4 eggs, beaten * 1/3 cup water * 2 cups grated zucchini * 1 teaspoon lemon juice * 1/2 cup mini chocolate chips This makes two loaves, but I wanted one with the chocolate chips and one without, so I added the 1/2 cup of chips after I poured the first batch into it's pan. If you want both to have chips then do a whole cup!

Instructions

  1. Preheat your oven to 350

  2. Combine all dry ingredients into a large bowl and all wet ingredients into a their own bowl.

  3. Add the wet ingredients to the dry and mix. Fold in the chocolate chips now if you want both loaves to have them.

  4. Bake them in two standard loaf pans that are sprayed with some sort nonstick spray for one hour or until your tester come out clean.

  5. Enjoy! These loaves are so good!
