I hesitate to call this a book review, it's more of a book rant, but I thought I would share some thoughts with you guys about reading Wuthering Heights as well as a delicious cupcake recipe. Trust me if you read Wuthering Heights you'll need something sweet to counteract all the bitterness in Heathcliff's soul. For the Cake: 4 large eggs, at room temperature 1/2 cup whole milk, at room temperature 1 Tablespoon vanilla extract 2 1/4 cup cake flour 1 1/2 cup sugar 2 teaspoon baking powder 1/2 teaspoon salt 1 cup (2 sticks) unsalted butter, softened For the Icing: 1/2 cup (1 stick) butter 1 teaspoon vanilla 1/8 teaspoon salt 8 oz confectioners sugar 1-2 Tablespoons milk, as needed 1 Tablespoon meringue powder 2 oz unsweetened chocolate, melted and cooled Hope you all enjoy and have a magical day!
