Godhumai Halwa or Wheat Halwa is a very rich Indian sweet made out of whole wheat berries. It is a rather long procedure extending over two to three days. But here is an easier and relatively quicker version.

You Will Need (5 things)
- 1 cup Whole Wheat Flour
- 2 ½ cup Water
- ¾ cup Sugar
- ½ cup Clarified Butter / ghee
- ¼ cup Milk
Steps (20 steps, 60 minutes)

make a dough with the flour and 1/2 cup water.

Let the dough rest in 2 cups of water...

...for three hours. (submerge the entire dough)

after 3 hrs, dissolve the softened dough in the water to get wheat milk.

strain the milk

and throw away the gunk. Let the strained milk settle for a while (about 5 minutes)

take 1/4 cup ghee + 1/4 cup milk in a non-stick pan.

Next add the milk into the pan carefully so that the layer settled at the bottom of the milk remains in the vessel.

Turn on the heat to medium and start stirring slowly. Add the sugar as well.

Meanwhile ghee roast cashew bits ...

...and keep aside.

keep stirring and when you get this consistency (after about 20 minutes) add the ...

...roasted cashews.

mix well

and keep stirring. And stirring and stirring and stirring.....

Add more ghee if it seems too dry and if the mixture starts sticking to the pan. You can add a 1 tbs of ghee whenever the mixture turns less glossy.

When the mixture starts leaving the sides of the pan and moves around with the ladle (like in the above picture) it is almost done. Try to roll a bit of the Halwa in between your fingers. If it does not stick, it is done!

Grease a plate with ghee and dump the halwa into the plate

Spread it out evenly with the ladle.

Let it cool. cut into desired shapes and serve!
