West Winds Lamingtons

Soft sponge lamington cakes dipped in chocolate icing and rolled in coconut

Inspired by Australia, these lamingtons are infused with West Winds Gin and coated in chocolate and coconut.

You Will Need (12 things)

  • 200 g Sugar
  • 100 g Butter
  • 3 Eggs
  • 1 oz Gin
  • 1 tsp Vanilla
  • 200 g Flour
  • 2 tsp Baking Powder
  • For the icing

  • 100 g Butter
  • 300 ml Soya Milk
  • 400 g Icing Sugar
  • 80 g Cocoa

Steps (13 steps, 60 minutes)

    Cream together the butter and sugar. Beat in each egg, one at a time.

    Whisk in the gin and vanilla.

  3. 3

    Whisk together the flour and baking powder.

  4. 4

    Add the flour to the butter and beat well to combine.

  5. 5

    Scrape the batter into a greased baking tin and smooth off the top.

    Bake for 30 minutes at 180'C.

    Cut the cake into 12 cubes.

    Melt the butter for the icing in a sauce pan and whisk in the soya milk.

    Whisk together the cocoa and icing sugar.

  10. 10

    Whisk the icing sugar into the melted butter.

    Fill a tray with coconut, dip each cake in the icing.

  12. 12

    Roll in coconut and place to one side to set. Repeat for each of the cakes.
