Watermelon is rarely thought of in the context of savory dishes, since it is usually eaten unadorned as a snack or light dessert. However, when watermelon is paired with fresh herbs, nori, and the bite of olive oil and chiles, it is transformed as a wonderfully savory-sweet salad ingredient. This recipe makes quite a bit of salad, as even the smallest watermelon yields quite a lot. Don’t worry about having too much, however— it’ll go fast.

You Will Need (7 things)

  • 8 cup Diced seedless Watermelon (about 1 medium melon)
  • ¼ cup Olive Oil
  • 1 tsp –2 teaspoons Chile flakes
  • Juice of 2 limes
  • Salt
  • 6 Sprigs fresh Mint , leaves only
  • 8 Sheets toasted nori, torn, or 1 cup Wakame

Steps (3 steps, 15 minutes)

    In a large bowl, combine the watermelon, oil, chile flakes, and lime juice. Season to taste with salt.

    Finely slice the mint leaves and toss to combine with the salad at the last minute before serving.

    Top with torn nori or wakame. Do not serve this dish too cold, or the flavors will be muted.
