For the chocolate mouse strawberries, Slice off the top of the Strawberry and core the middle, set aside. In a double broiler or the cheap mans way a glass bowl over a boiling pot of water melt the chocolate chips. Dip the ends of the strawberries and set on a waxed paper line pan to cool. Whip with hand mixer or standing mixer the remaining chocolate with the whipped cream and Coffee until the consistency of icng or a little thinner. With two fingers taste and go back for seconds if needed. Pipe or spoon the mousse into the strawberries, I saved a small amount of chocolate to drizzle over the top. Alternate cheesecake strawberries, Cut and dip strawberries the same as above set aside Mix the cream cheese vanilla and powder sugar and pipe into strawberries. With 2 fingers taste and go back for seconds, oooooohhhhh! As above I saved some of the melted chocolate to drizzle over, but a crushed graham cracker would be awesome too.
