This vin maison is for the chillier times of year. A bit of cinnamon, cloves, and star anise imbue the wine with heat and warmth. Bear in mind that the wine needs ample time to infuse, so plan to have bottles regularly steep- ing in the refrigerator if you’d like to routinely enjoy this aperitif.

You Will Need (8 things)
- 1 cup Chopped Apples or pears (or a combination of the two)
- 3 tbsp Sugar
- ¼ cup Vodka
- One 2-inch Cinnamon Stick
- 4 Whole Cloves
- 1 Star Anise
- One 750-ml bottle Red Wine (such as Pinot Noir or Malbec)
- Ice or sparking Water , to serve

Combine the fruits, sugar, vodka, spices, and red wine in a clean and dry 1⁄2-gallon glass container with an airtight lid (such as a Mason jar). Stir until the sugar granules are fully dissolved. Secure with a lid, give a good shake, and store in the refrigerator for 3 weeks.

Strain the liquid through a cheesecloth-lined sieve set atop a bowl. Use a spoon to press down on the fruit to extract as much liquid as pos- sible. Compost the solids. Transfer the wine to a lidded container. Store in the refrigerator. To serve, pour about 1⁄2 cup into an 8-ounce glass. Serve with ice, sparkling water, or plain. Use within 1 to 2 months.
