We've been getting more and more addicted to Vietnamese food and I've found that the combination of Thai basil, mint and dill taste amazing together.
Chop the herbs and onion and blend in a food processor until smooth.
Add the fish and blend for a few seconds until combined. Beat in the egg, panko, sweet chilli sauce and oyster sauce until combined.
Roll your mixture into small balls and coat with flour and breadcrumbs.
Heat a griddle with some oil and fry the fishcakes on either side for 3-5 minutes until golden.
Serve hot with dipping sauce or in a bowl of pho.
