Before Tom stopped eating meat, he tried one of Matt's Bar famous Juicy Lucy burgers in Minneapolis and I'd always wondered what it tasted like. Feeling inspired, I decided to make my own vegetarian versions using Quorn burgers and stuff them with cheese, mustard, garlic and pickles. They were awesome!
Before Tom stopped eating meat, he tried one of Matt's Bar famous Juicy Lucy burgers in Minneapolis and I'd always wondered what it tasted like. Feeling inspired, I decided to make my own vegetarian versions using Quorn burgers and stuff them with cheese, mustard, garlic and pickles. They were awesome!
Cut two slices of cheese into two squares, a little smaller than the size of your burgers, and spread two of the slices with wholegrain mustard.
Place the other cheese squares on top and spread each with butter. Crush a garlic on top of each square and then sprinkle with dried herbs.
Using a small knife, carefully cut a slit in the middle of your burger, large enough to squeeze your cheese square into.
Carefully stuff each burger with the cheese squares and place in a hot oven for 5 minutes.
Meanwhile chop your pickles into thin slices.
After 5 minutes, remove the burgers from the oven and spread the tops with BBQ square. Lay the sliced pickles on top and cover with a slice of cheese.
Cook in the oven for 3 more minutes, meanwhile toasting your burger buns.
Enjoy but be careful, the middle can be very hot!
