Whisk together the cornflour, ground ginger, Chinese five spice and sea salt in a bowl.
Chop the seitan into thin strips.
Chop up the carrots and the onion.
Fill a frying pan with a thin layer of vegetable oil.
Stir the seitan into the cornflour mix, making sure it's all coated.
Fry the seitan for about 5 minutes until golden and cripsy.
Strain the seitan onto a paper towel.
Heat another tablespoon of vegetable oil in the frying pan.
Fry the carrots for two minutes until softened.
Add the onion and fry for another 3 minutes.
Add the pickles ginger and sesame seeds.
Add the seitan.
Add the honey and soy sauce.
Fry for another minute then serve!
