I got this idea from a TV show about rationed cooking, combined with my experiments making a non-cheese based creamy sauce. It is very cheap and simple but surprisingly rich and tasty when finished. YEAST EXTRACT is marmite or vegemite. For some reason it won't let me add it to the ingredients. You need 2 teaspoonfuls for this recipe. A strong veg buillion powder could be subsituted, but would change the taste a bit.

Put the oven on at 200/GM6. Wash and chop up all your vegetables and put them, with a little water, in a plastic jug. Zap this in the microwave for 5 min. You may wish to just pierce the potato and do that seperately in the microwave for 7-8 min. Cut it up once cooked.
Melt the butter in a small saucepan with the marmite (yeast extract), paprika, and herbs.
Still on the hot hob, add the flour and stir to create a paste.
Add the milk and stir/mush up the paste into it as the milk warms. Keep stirring! Eventually the sauce will start to boil, and this point it will SUDDENLY thicken and go glossy.
Drain your veg and put it into the bottom of a pie dish/lidless casserole. Pour the sauce all over the top and give the dish a shake to get everything coated. Give it a little shake of salt and white pepper.
Roll out your pastry and cover the dish, pressing down around the edges. Make a couple of small holes to let the steam out. I made little leaves to decorate/hide where I let the pastry crack when moving it from the rolling-out board (doh). If you want you can glaze it with some milk.
Put in the middle of the oven to bake for 1 hour. Enjoy! It is very filling- served with bread and butter and a tomato salad it makes an ample dinner. I can't tell you if it's good cold because my boyfriend scoffed all the seconds.
