Paella can be made using a variety of ingredients. Try using seafood, meat, tofu or a different selection of vegetables. Pine nuts would work perfectly. Use as many or as few ingredients as you like.

Cat you didn't mention how many it served. I made it anyway and I got 3 meals out of it by putting in 3/4 cup dry rice. I've found that the amount of rice that would be enough for one person equals the amount the meal would serve for.
eg- if 1/2 a cup of dry rice would be enough for 2 people in your family then the meal serves too. But if you want the meal to serve like 5 people then you might need to add extra of the other ingredients.
