Begin by bringing a pan of water to the boil and cooking the noodles for about 2 minutes so that they're soft but still crunchy.
Instead of using egg to bind the noodles, we're going to be using chia seeds as our vegan alternative. Mix the chia with the warm water and stir until they form a thick gel.
I want my burgers to look really black, so I'm adding a little activated charcoal.
Mix the chia and charcoal oil into the noodles making sure they're completely coated.
Mix the charcoal into the vegetable oil.
Strain the cooked noodles and place in a bowl.
Divide the noodles between 4 round flat dishes, roughly the size you'd like the burger buns to be, and press flat. Chill in the fridge for an hour before cooking.
To make the wasabi mayo, squeeze the vegan mayonnaise into a bowl and add the wasabi powder to your taste.
Add some nori flakes and mix well.
When you're ready to eat, begin cooking the Oumph! burgers in one frying pan.
And then fry the ramen buns on a medium heat with a little vegetable oil in a second frying pan.
Fry on one side for about 5 minutes until crispy and then flip other and fry the second side.
To serve, place the Oumph! burger on one of the ramen buns and top with wasabi mayo before sandwiching a second ramen bun on top.
