I had a bunch of leftover Kale and decided to add it to a recipe I make quite often. Rice and beans are a traditional Latino dish originating in Brazil, Puerto Rico, and Spain. Although simple this dish is very filling and nutritious. The combination of Rice, Beans and Kale provides Iron, Protein, and Vitamin B, beta carotene, vitamin K, vitamin C, and calcium. This meal is PERFECT for Vegans and Vegetarians.

First saute half a chopped green bell pepper and half a chopped onion. Next add around 3 cups of cooked pinto beans with juice. Look at my other tutorial on how to cook Pinto Beans.
Once the bean mixture is thoroughly heated add around 3 cups of cooked rice. You may use brown rice to make this dish even more nutritious. Mix the rice and beans together. Simmer on med. heat while you chop the kale.
Add a dash or cap-full of lime juice. If using real limes use the juice from half a lime. Salt and pepper to taste.
Rinse 2 bunches of kale in cold water. Fold in half longways and cut off the stem. Continue cutting until the kale is in medium size pieces. Sprinkle kale OVER mixture, do not stir. Simmer Rice,Bean, & Kale until kale is wilted. The kale will turn dark green and look glossy. Mix the beans once this happens.
