Following a recipe from an old 'housekeeping' book - I modified a non- vegan recipe for basic pancake mixture. Enjoy these truly decadent pancakes! This recipe can easily be made gluten free : * Use a gluten free egg replacer, like Orgran No Egg * Use gluten free flour
*Measure out 100g of plain flour and a large pinch of salt. *Sieve these into a large mixing bowl.
Time to use the egg replacer! I was able to pick up Orgran Egg Replacer locally. Read what it says on the box: *Use a mug to do the mixing *For 1 whole egg, add 1 tsp of No Egg to 2 tbsp water
*Melt 1 tbsp marg *Mix the melted marg into the No-Egg mixture in the mug. *Combine then add to 137.5 ML of milk. (soy milk, rice milk, oat milk- whatever)
*Combine the 137.5 ML of milk, egg replacer and melted marg into the dry mix, little at a time. *Beat until it becomes thick and creamy. Use a whisk or hand blender for this. Once combined- add the remaining 137.5 milk to get required consistency.
*Melt some butter in a frying pan (medium heat) *Ladle pancake batter into frying pan *fry pancake for about 2-3 minutes - check the underside before flipping and cooking the other side.
* Repeat above steps until all pancake batter is gone.
Serve with fruit, maple syrup, ice-cream... they're yummy whatever you decide to eat them with!
