Vegan Loaded Baked Potato Soup
This loaded baked potato soup is healthy and vegan, but fills you up!

[Vegan] Baked Potato Soup

You Will Need (12 things)
- 1 medium Onion , peeled and diced
- 1 tbsp Olive Oil
- 1/4 tsp Garlic Powder
- 3 tbsp Flour
- 2 cups vegetable Broth or “not-chicken” broth (that’s what I use)
- 2 medium, Potatoes washed well, and diced (you don’t have to peel them but you can)
- 1 cup Soy Milk (or almond milk)
- 1/3 cup nutritional Yeast
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Parsley
- 4 drops Liquid Smoke
Steps (2 steps, 30 minutes)

Cook your diced onion in a little olive oil until soft, and season with the garlic salt. Add in the flour and broth and stir until well combined. Add in your potato and bring to a boil. You’ll pretty much have to stir it every 30 seconds, or the potato will stick to the bottom! Add in the soymilk, nutritional yeast and seasonings/liquid smoke. The key(s) to this soup are the nutritional yeast and the liquid smoke. The nutritional yeast gives it a cheesy flavor, and the liquid smoke provides the type of flavor you’d get from bacon.

This makes about 6 cups of soup. It has about 150 calories per cup, and includes 6 grams of fiber and 9 grams of protein. Seriously. For potato soup!
