I believe I based this project on another Vegan coleslaw project. it may have been the link I included from Vegan Village. I love to add little things into recipes to see how it'll turn out, so I kind of made it my own and add whatever the hell I want in it!

Description

I believe I based this project on another Vegan coleslaw project. it may have been the link I included from Vegan Village. I love to add little things into recipes to see how it'll turn out, so I kind of made it my own and add whatever the hell I want in it!

Instructions

  1. This is the bit that takes the longest; GRATING! Grate about 1/2 of a whole cabbage, both carrots and 1/2 a red onion. (Obviously change the quantities if you want more or less) (And substitute and ingredients or add more in! Like adding parsnips or some vegan cheese. Go wild!)

  2. Put all grated vegetables into a big bowl (get a bowl bigger than you think you need- this gives you room for stirring) And add 1 squirt/1 tsp of lemon juice and about a capful of white vinegar. (I like cooking by eye!) (You can add these depending on how you want your coleslaw to taste, but this always works fine for me) Mix well.

  3. I use Mayola for this bit, but if you have a favourite faux mayonnaise you want to use then- go ahead! I like my coleslaw quite juicy- so i add about 1/4 - 1/2 bottle of Mayola to my mixture. obviously- add as much or as little as you want! Mix very well!

    Add salt and pepper to taste Pack it all into an air tight container, date, and put into a fridge. Et voilà! you are finished (I always find that it tastes better after a day of being in the fridge- maybe because the flavour of everything has a chance to soak into the juice, i'm not sure!)
