Vanilla Amethyst Cupcakes

These cupcakes are magical, mystical, and vegan. Yum!

You Will Need (15 things)

  • ⅔ cup cashew Milk
  • ⅓ cup Coconut Oil (melted)
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Vanilla Extract
  • 1 ¼ cup Flour
  • Cane Sugar
  • 1 tsp Baking Soda
  • Salt
  • For Frosting:

  • * 1 1/2 cups Powdered Sugar (more or less as needed for consistency)
  • * 3 Tbsp Earth Balance Butter, softened
  • * 1 tsp Vanilla Extract
  • * 1 tbs cashew Milk (or your preference)
  • For Garnish:

  • Purple & Crystal rock candy

Steps (5 steps, 45 minutes)

    In medium bowl, milk, oil, vinegar & extract – whisk until blended.

    Add flour, cane sugar, baking soda, salt – mix until well combined.

    Add to your cupcake pan (lined with cupcake holder if you have them. If not, just use spray!) and bake at 350 F for 15-20 minutes (or until golden on top).

    Allow to cool before frosting. While you wait, add all ingredients for frosting into a small bowl and whisk until smooth.

    Frost once cupcakes are cooled and garnish with crushed purple and crystal rock candy.
