> Heat the oil in a saucepan (you can substitute it fully or partly with clarified butter) > Add the mustard seeds and lentils and heat it till the mustard seeds start to pop. > Add the bird's eye chilli and curry leaves and saute for half a min. > Add the onions and let it cook till soft, around 4-5 min. > Add the tomatoes and cook for 4 more minutes. > Next add all the vegetables and salt and let it cook, covered, till the vegetables are done. (alternatively you can microwave the vegetables with a little water and some salt while the onions are getting cooked, and then add them into the pan) add salt and sugar to taste. >also add the grated ginger. > Now add the semolina and saute for a minute. > next pour in the boiling water slowly while stirring so that no lumps are formed. > Keep stirring till the semolina gets puffed up and cooked and the water is completely absorbed by the semolina. > Garnish with cilantro and serve.
