You Will Need (16 things)

  • Dressing:

  • ¾ bunch Italian Parsley , minced
  • 7 ½ Lemons , juiced
  • 4 Cloves Garlic , minced fine
  • 2 tbsp Sumac
  • 1 tbsp Smoked Paprika
  • 2 tsp Cumin
  • 1 ½ tbsp Chopped fresh Oregano
  • Salad:

  • 4 cup Cucumber
  • 2 Green bell Peppers
  • 2 Red Bell Pepper s
  • 3 cup Radishes
  • 7 cup Red Cabbage
  • 1 ½ cup Red Onions
  • 3 pt Cherry Tomatoes , halved

Steps (4 steps, 15 minutes)

    Place the minced parsley in a medium bowl. Add the lemon juice, garlic, sumac, cumin, smoked paprika, and oregano. Whisk until blended, then slowly drizzle in the oil, stirring vigorously. Season with salt and pepper, taste, then adjust seasonings.

    Dice the cucumbers, bell peppers, radishes and red cabbage into roughly the same size—about a 1/2-inch dice and place in a large mixing bowl.

    Add the cherry tomatoes and chopped red onion

    Pour the dressing over the salad and toss with tongs until the vegetables are coated. Taste and adjust seasonings.
