There are a lot of steps to this cake but it is very nice. It is best made the day before you need it.
There are a lot of steps to this cake but it is very nice. It is best made the day before you need it.
Pre heat oven 350/ 180 degrees. Line tin & wrap the outside in 2 layers of foil.
Cake... Melt the chocolate
Place egg whites in bowl with 1/3 of the sugar. Whip until light & shiny. Add remaining sugar, vanilla & salt. Beat until incorporated. (Soft peaks).
Beat softened butter into chocolate.
Add egg yolks to chocolate mixture.
Add 1/2 the meringue mixture to the chocolate & fold in gently. Add the remaining meringue & fold to incorporate.
Bake for 28-30 mins. Cool at room temp then refrigerate.
Chocolate mousse... Place chocolate into a bowl. Combine gelatine with water. Bring 1/2 cup of cream to the boil & pour over the chocolate. Stir until chocolate is fully melted.
Heat gelatine until melted. Stir into melted chocolate.
Whip 1 cup cream until soft peaks.
Add a little of the whipped cream to the chocolate & fold in. Fold in the remaining cream.
Pour on top of the cake base. Refrigerate until set.
White chocolate mousse... Do the same as the chocolate mousse. Pour on top of the chocolate mousse & refrigerate until set. It is best left over night.
Cut & serve.
