Tomato Cucumber Couscous

I find this way tastes better than when you cook the couscous in a pot of water. I found the recipe for how to cook the couscous somewhere online but added the tomatoes and cucumber and salad dressing to it and it tastes so much better with those things. It's not bad with chick peas in it too. I hope someone else loves it as much as I do. :)

You Will Need (7 things)

  • 2 cup Water
  • 1 Cucumber
  • 1 cup Couscous
  • 1-2 large Tomatoes
  • Italian Salad Dressing
  • Saran Wrap
  • 1 tbsp Olive Oil

Steps (10 steps, 20 minutes)

    Put 2 1/4 cups of water into a pot with a little salt and put on to boil.

    While the water boils, you will need to prepare the couscous. Get out a large casserole dish. Spread the 1 1/2 cups couscous evenly on the bottom of the pan.

    The water should be bubbling by now, so add in the 1/2 tablespoon of olive oil and stir.

    Turn off the stove and pour the water/oil mixture into the dish that has the couscous in it.

    I didn't take a picture of this, so here is what the recipe looks like on paper.

    Cover with the saran wrap immediately so that no heat can get out.

    Leave on the counter for 15 minutes, which is the time it takes for the water to be absorbed by the couscous.

    Cut up the tomatoes and the cucumber while you are waiting. Just chop them into chunks.

    When the 15 minutes are up, take a fork and *fluff* the couscous.

    The tomatoes and cucumber can be added in and mixed with it at any point now.

    *Optional* You can add Italian salad dressing to make it taste better. Just add as much as you like.
    The whole wheat kind tastes better without it and the plain kind tastes better with it.

    Cover with the saran wrap and store in fridge when not in use.
