Marshmallow making is a little tricky at first because it combines all the skills of jelly making, candy making and meringue whisking at the same time but once you've got the hang of it, the options for flavours and combinations are endless! These tasty marshmallows are filled with chopped nuts and laced with Thunder Toffee Vodka for an extra indulgent treat.
Marshmallow making is a little tricky at first because it combines all the skills of jelly making, candy making and meringue whisking at the same time but once you've got the hang of it, the options for flavours and combinations are endless! These tasty marshmallows are filled with chopped nuts and laced with Thunder Toffee Vodka for an extra indulgent treat.
Place 450g of sugar in a sauce pan with half of the water and glucose syrup and bring to the boil. Stirring until the sugar has dissolved.
Leave to simmer until the mixture reaches hard-ball stage on a confectionary thermometer.
Meanwhile dissolve the two packets of vege-gel in a bowl with the other half of water and heat in a microwave for 30 seconds. Place to the side.
Whisk the whites from two eggs in a bowl until frothy and then add the sugar and whisk for a few more minutes.
Remove the candy from the heat when it's reached hard-ball stage and stir in the dissolved vege-gel in water.
Add the candy to your egg whites and whisk for 10 minutes until light and fluffy.
Whisk in the toffee vodka.
Stir in the chopped nuts.
Whisk together the icing sugar and cornflour and line a small baking tray with cling film. Sprinkle the bottom and side of the baking tray with the icing sugar mixture and then scrape the marshmallow inside. Sprinkle the top with the remaining icing sugar and place in the fridge for 4 hours until set.
Chop the marshmallow into squares and enjoy!
