Lovely coconut cake. It is not too sweet & very tasty.
Lovely coconut cake. It is not too sweet & very tasty.
Heat oven 180 degrees. Cream butter, sugars, vanilla & almond together.
Add the eggs one at a time. Mix to combine.
Add the flour, bicarb & baking powder. Beat well to incorporate.
Add the butter milk. Stir to incorporate.
Add the coconut. Stir to combine.
Pour into tins. Bake for approx 30 mins. Until cooked through.
Make the icing... Combine the cream cheese & butter. Beat until well combined.
Add the vanilla & almond extract. Combine.
Add the icing sugar in a few lots & stir until thick & well combined.
Cut cakes in two. Stack with icing in the center.
Coat the whole cake in icing. Place in the fridge to harden for 10 mins.
Coat the cake again with icing. Add the toasted coconut to the side edge of the cake.
Add a smooth layer of icing to the top of the cake & make a pattern on the top.
