Coconut milk plays such an important part in Thai cooking and is a great vegan substitute for cream. This gave me an idea! I used coconut milk to make a Thai version of a classic French dauphinoise.

You Will Need (8 things)

  • Handful of Baby Potatoes , sliced
  • Sesame Oil
  • 100 ml Coconut Milk (from a 400g tin)
  • 1 Garlic clove, crushed
  • 1 pinch Of dried Chilli Flakes
  • ½ Pak Choi , sliced lengthways
  • Splash of Soy Sauce
  • Salt and Pepper

    Preheat your oven to 190°C/gas mark 5. Arrange the potatoes in an ovenproof dish, drizzle with sesame oil, season with salt and pepper, then bake in the oven for 10 minutes. After 10 minutes, add the coconut milk to the potatoes, along with crushed garlic and chilli flakes, and top with the pak choi. Drizzle with sesame oil and bake for another 10 minutes. Remove from the oven and serve with a splash of soy sauce.
