Tequila Citrus Cake
A zesty lemon & lime cake infused with tequila and drizzled with lemon icing!

Full of zest, this cake is infused with Ambar Tequila, drizzled in a sweet lemon icing, topped with lime slices and finished with a sprinkling of sea salt.

You Will Need (12 things)
- 300 g Self-Raising Flour
- 200 g Coconut Oil
- 150 g Sugar
- 150 ml Soya Milk
- 3 Eggs
- 2 oz Ambar Tequila
- 1 Lemon
- 2 limes

For the icing
- 200 g Icing Sugar
- 1 oz Tequila
- Sea Salt
Steps (12 steps, 45 minutes)

Whisk together the coconut oil and sugar.

Add the tequila.

Grate in the zest from the lemon and a lime and then squeeze in the juice from the lime.

Beat in the eggs, one at a time.

Finally, whisk in the flour and milk.

Pour the batter into a greased cake tin.

Bake at 180'C for 45 minutes.

Gently tap the cake out of it's tin while it's still a little bit warm and leave to cool.

Whisk together the icing sugar, tequila and squeeze in the juice from the lemon - just enough to get the icing to the right consistency.

Drizzle the icing over the cake.

Slice up the final lime and arrange around the top of the cake.

Sprinkle with a little sea salt and serve.
