Leave in the oven to cool.
Best to be left in the fridge overnight.
You can use boiled potatoes instead of baked.
I would have used double the spice mixture to make it more flavourful but it all depends on your taste preferences.

You Will Need (15 things)

Base
- 8 oz Biscuit(s) Crushed
- 4 tbsp Butter Melted

Filling
- 2 lbs Sweet Potatoes
- 32 oz Cream Cheese Room temp
- 1 cup Sugar
- 3 eggs
- 2 tsp Pumpkin Pie Spice
- 2 tsp Vanilla
- 1/4 cup Heavy Cream

Optional decorations
- Cream
- Pecans
- Caramel Sauce
Steps (8 steps, 80 minutes)

Base... Heat oven 350/175 degrees.
Mix together biscuit & butter.
Press into a tin.
Bake for 8 mins.

Increase oven temp to 400/200 degrees.
Pierce the potatoes, place on a tray & bake for 50 mins.
Remove & cool completely.
Peel skin & purée potatoes.

Filling...
Heat oven 350/175 degrees.
Combine cheese & sugar together.

Add vanilla & eggs one at a time.

Add spice mix, cream & potatoes.

Pour on top of the base.
Bake in a ban Marie for 55-60 mins.

Leave to cool in the oven.
Place in the fridge overnight.

Decorate with cream, nuts or whatever you like.
Cut & serve.
