Healthy Sweet Potato Salmon Cakes

You Will Need (11 things)
- 1 Medium Sweet Potato roasted and smashed, can be made in advance
- Can wild Salmon
- Bread Crumbs I used Italian
- 2 Eggs
- 2 Green Onions thinly sliced
- Juice of half a Lemon
- 2 tbsp Extra Virgin Olive Oil
- 4 tbsp Plain Greek Yogurt can use mayo if preferred
- 1 tsp Chipotle seasoning
- 2 Cloves Garlic finely minced
- 1 tbsp Fresh Lemon Juice
Steps (3 steps, 20 minutes)

In a large bowl combine all ingredients and mix to combine.
In a large skillet heat the two tablespoons of oil over a medium heat. -

Form the salmon mixture into 6 evenly sized patties. Fry in the skillet until golden brown color, about 5 minutes per side.

Chipotle Yogurt Sauce
While your patties are cooking make you chipotle sauce by combining all ingredients in a small bowl. Serve on top of the patties.
