Toss the sweet potatoes in olive oil, sprinkle with sea salt and roast at 200'C for 20 minutes until cooked but still firm.
Thinly slice and cook the onion until golden. Slice the sweet potatoes and mix together with the onion, mayonnaise, mustard, balsamic vinegar and olive oil. Squeeze in the juice from the lemon and chop in some fresh chives and parsley. Mix together and season.
