Description

My mother is Filipino so I have had many Filipino dishes growing up and this is my absolute favorite. I finally figured out how to make it so delectable, so I hope you all enjoy it!

Instructions

  1. Small lechecarmel 1245962421

First take the 1/2 cup sugar and 1/2 cup water and carmelize by bring the mixture to a boil until it get light brown in color. Next, bring to a simmer until it is more carmely in color. Then pour evenly in ceramic dishes. *Don't forget to preheat oven to 350 degrees

  2. Small lechemix 1245962437

Next is the custard part. Pour in half a can of both evaporated and sweetened condensed milk, five egg yolks, 1/2 tsp of vanilla extract. Stir gently with a whisk to avoid bubbles until very well mixed. Strain through, I used a wire mesh one to ensure no clumpyness.

  3. Small lechecover 1245962476

Pour mixture evenly into dishes and cover each with foil.

  4. Small lechepan 1245962533

Place in a square pan (you can put a tea towel on the bottom of the pan to minimize slipping) Fill with hot water and inch up the sides. Put in the oven for 40 minutes (5 minutes more or less) I like to turn it half way into the cooking.

  5. Small lechedone 1245962570

To check for doneness, insert a knife and if it pulls out clean it's done. I like to refridgerate mine and eat them chilled
