I used black & white sprinkles but you can use coloured sprinkles if you like.

Base... Heat oven 350/175 degrees. Cream sugar & butter together.
Add egg & vanilla. Mix to combine.
Fold in flour, bicarb & salt.
Fold in sprinkles.
Press into a tin.
Cheesecake... Mix together cheese & sugar.
Mix in vanilla & eggs one at a time.
Pour over the base. Bake for 55-60 mins. Allow to cool. Refrigerate for at least 4 hrs.
Topping... Whip the cream & icing sugar together to stiff peaks.
Fold in the sprinkles.
Pour over the cheesecake.
Top with more sprinkles.
Cut & serve.
