This was a really fast and easy dinner. It's perfect as a main dish or as a side. I make it with home grown tomatoes and peppers, so it's extra delicious. Left over stuffing can also be eaten as a rice salad or mixed with meat and rolled in a tortilla. This recipe makes about 10 medium to small sized tomatoes

cook rice and chop pepper. Cut the olives in half. Sauté the onion. add all ingredients except the tomatoes together into a bowl. Don't forget the lemon juice, cumin, and salt/pepper.
cut the core out of the tomato
slice the top of the tomato off. save the cut off part
use a small knife to core the tomato. save so of the tomato meat.
cut up the extra tomato from the last two steps, and add it to the stuffing mixture.
stuff the tomatoes. you can grate parmesan cheese over top and broil for 1-2 minutes (use aluminum foil when you broil). Once they're done you can enjoy a delicious healthy vegetarian dinner.
